Vegetable stock to me isn’t a recipe, but instead it’s a normal habit of life. I love cooking with vegetable stock! I use it to make quinoa, rice, lentils… pretty much anything I need water for. It gives so much flavor to a dish. And when you make it yourself, it’s free!

My family loves Mediterranean food! We’ve actually had to stop ourselves from eating Greek inspired dinners for a week straight. Not only are the flavors delicious, but they use fresh ingredients, and they are easy and quick to make! We’ve also found that it’s pretty easy to feed Gideon our favorite foods cut up into bite sized pieces. One of his favorite foods is actually hummus!

This is a super simple and fast dinner that I love to make.  It’s definitely not an authentic recipe, but it’s asian inspired and makes the house smell amazing.  Every time I make it CJ comes home and says the house smells like a restaurant, and it makes me feel proud and so sophisticated.  The rice makes it a filling meal while the cucumber salad keeps this dinner light and fresh.

kristin's food philosophy

The way I think about food has morphed drastically lately, starting when I got married and then again while I was pregnant. I grew up being very picky, not eating many vegetables or fruits and relying on staples like Mac and Cheese, King’s Hawaiian rolls, and Pop Tarts. I was happy with the way I ate and was not willing to try new things. I actually ate a strawberry for the first time in my adult life while in college!

Making these cookies every year around Christmas time has been a must for me and my sister.  I’m excited to carry this tradition on with my growing family. If I’m invited to a cookie exchange or holiday party you can be sure I’ll be bringing a tin of these.  I also love passing them out to my neighbors and friends.
